I've made this cobbler twice now and let me tell you, its name doesn't lie. It is really easy and really really good.
1/2 cup (1 stick) butter
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 cup granulated sugar or light brown sugar, packed
2 cups blueberries (peaches, apples, strawberries, raspberries, etc)
Preheat oven to 350 degrees
Put the butter in an 8x12-inch ovenproof serving dish and place in the oven to melt. In a large bowl, mix together the flour, baking powder, and salt. Stir in milk and sugar. Pull the hot dish of melted butter out of the oven and pour in the batter, which will bubble around the sides. Spoon in fruit and its juices evenly over batter. Place the dish back in the oven and bake until batter is browned and has risen around the fruit, about 30 minutes. Serve warm (with ice cream!!).
You, my sweet sister in law, are my idol. You BAKE BLUEBERRY PIES! Now that? That's impressive and looks yummy to boot!

To you, it's called "Easy Blueberry Pie", but in my cookbook it would be called "What's Baking Powder (?) Blueberry Pie." =)
Make you a deal ... I'll take you to Taco B or make a Sonic run for lunch next time we're both home, if you'll let me watch you make this pie so we can partake. It just looks too good to miss out on!
